• They're intentionally firm and dry. Amber is not a soft date. The dense, dry, structured texture is the defining characteristic of this variety, not a quality issue.
• They're large and darker in colour. Dark amber tones with a thick skin. Very different from sticky dates, most UK buyers are familiar with.
• The sweetness is subtle. Amber won't hit you with an intense sugar rush. The flavour is mild and clean  more like a nut than a confection.
