How Should Texture Be Measured?

Moisture content is the starting point but not the whole answer. Cured dates generally fall between 15 and 27 percent moisture, and industry classification puts soft above 30 percent, semi soft between 20 and 30 percent and dry below 20 percent. Skin thickness and flesh fibre modify that considerably. Two dates at the same moisture level can feel entirely different in the mouth.

Ripeness stage complicates things further, because the same variety changes dramatically as it matures. A variety picked and sold at a slightly earlier stage will read as softer than the same variety cured longer. Batch and season therefore shift positions slightly.

Which Dates Are Softest?

The softest end belongs to large, high moisture varieties that yield under light finger pressure and coat the fingers. These are the dates that work in dessert contexts and blend into paste without soaking. They are also the ones that suffer most in a warm bag or a hot car. Softness is a genuine quality in the right setting and a nuisance in the wrong one.

Sukri dates deserve a note here because they are often described simply as very soft, which is only half true. Sukri is sold in both a soft form and a drier, firmer form, and the two eat very differently. Published texture measurements record one Sukkari sample at over 40 newtons, among the firmest tested, which almost certainly reflects the drier form. Checking which form you are buying explains most of the confusion around this variety.

Which Dates Are Firmest?

The firm end belongs to denser, lower moisture varieties that hold their shape and stretch a single date over a longer eating time. Mabroom dates sit at that end consistently, with an elongated shape and a slow chew that many people prefer for exactly that reason. Amber dates combine size with structure, which is unusual and makes them practical for carrying. Neither is dry in the sense of being stale.

Pressing the fruit and checking the skin answers it in seconds. Resistance followed by yield is normal, while no give at all with a split skin is not.

Does Storage Move a Date Up the Scale?

Yes, and further than most people expect. Dates equilibrate with air at roughly 70 to 75 percent relative humidity, while a centrally heated UK home in winter can sit below 30 percent. An open pack therefore loses moisture continuously and firms up week by week. That drift is why a date that felt soft on Monday can feel noticeably firmer a fortnight later.

Keeping a Variety Where You Bought It:

  1. Reseal the pack after every use rather than folding it over

  2. Store away from radiators, hobs and windows

  3. Refrigerate anything you will not finish within a month
